I use ground turkey instead of beef, and add an extra packet of taco seasoning, as we like it really zesty. I love to serve guacamole on the side.
I have done this with a jar of spaghetti sauce and ground turkey, or even meatballs and spaghetti sauce (It tastes like a meatball hoagie), then I use Mozzarella and Parmesan on top….YUMMY!!
Garlic Roasted Tomatoes - Just like Candy!!!
So, I love tomatoes, and they are usually lackluster this time of year. This is the best way to eat them. At least I think so. I eat them on sandwiches, or with just a fork. Tonight, they are going over baked chicken breasts with a little sprinkle of parmesan. They would be great tossed with pasta or rice. The beautiful thing is that you can make a batch, and store them in the refrigerator and add them to anything & everything.
Heat oven to 300 degrees.
Ingredients:
Wash roma tomatoes (easy to work with and inexpensive). Slice them lengthwise, like little boats. Drizzle some olive oil on each tomato and sprinkle some garlic and a pinch of salt on each.
Bake them for 2 hours, YES, 2 hours. And eat them!! I hope you like them.
Green Enchiladas - YUM
1 lb boneless chicken breasts
1 can green enchilada sauce or jar of favorite salsa verde
1 brick of low fat cream cheese (Neufchatel), cut into cubes
1/2 onion, diced
1 can chopped green chiles
2 cups cheddar (queso or a mexican cheese blend works too)
9 whole wheat tortillas (9” or 12 of the 6”), you may use a few more or a few less
I serve with Guacamole, chopped lettuce and spanish rice on the side. Enjoy
